Hattan Nishiki Ichigo: Hiroshima Prefecture’s Own Sake Rice

  • Sake JP editorial team

Hattan Nishiki Ichigo (八反錦1号) is one of the varieties of “sake rice (sakamai, 酒米)”, rice suited to making sake. It is a variety of Hiroshima Prefecture’s own, and all of the 2024 crop was grown in Hiroshima Prefecture. Sake rice as a whole is explained on the Types of sake rice page.

How it came about and its features

Hattan Nishiki Ichigo is a variety based on “Hattan No. 35 (八反35号)” and “Akitsuho (アキツホ)”, and Hiroshima Prefecture adopted it in 1984. It forms ears early (an early-maturing variety), does not fall over easily, and gives a large yield. 1,000 grains weigh about 26 grams.

Main producing areas
