Sake in Nagasaki

Nagasaki Prefecture lies in northwestern Kyushu and includes, besides its mainland, islands such as Iki, Tsushima and the Goto Islands. The Nagasaki Sake Brewers Association has 23 member breweries in the prefecture that make sake or honkaku shochu (a Japanese distilled spirit made from rice, barley, sweet potato and other ingredients) (as of October 2026). Of these, 13 breweries make sake, and 11 of those 13 also make shochu.

The sake breweries are scattered across the prefecture. There are 4 breweries on the Shimabara Peninsula, and others in Sasebo City, Hirado City, Isahaya City and Hasami Town, and on the islands of Iki and Tsushima. Mount Unzen rises in the center of the Shimabara Peninsula, and Shimabara City on the peninsula has more than 50 spring sites. These “Shimabara springs” have been selected for the Ministry of the Environment's “100 Remarkable Waters of Japan.”

Iki has 7 breweries that make shochu, and shochu made in Iki was designated in June 1995 as “Iki” under the geographical indication (GI) system, which protects the names of production regions. In December 2015, Nagasaki Prefecture put into force the “Ordinance on Promoting Toasts with Alcoholic Beverages Made in Nagasaki Prefecture,” which encourages toasts with drinks made in the prefecture. Before that, in 2013, Iki City and Hasami Town in the prefecture had each made a similar ordinance.
