Sake in Saga
Saga Prefecture lies in northwestern Kyushu and faces two seas: the Genkai Sea to the north and the Ariake Sea to the south. The Saga Sake Brewers Association's brewery introductions list 23 sake brewing companies in the prefecture (as of October 2026). In June 2021, “Saga” was designated under the geographical indication (GI) system, which protects the names of sake-producing regions. Its condition is a “hojun” (full-bodied) taste that keeps much of the rice's full umami, feels mellow in the mouth, and spreads the sweetness unique to rice across the palate. The GI standards say that, as a sake to enjoy with food, it goes well with relatively strongly flavored dishes.
Rice and water are what support this sake. From the northeast to the center of the prefecture runs the Sefuri Mountains, with peaks of about 1,000 m such as Mount Sefuri and Mount Tenzan, and in the southwest rises Mount Tara. Between the south of the Sefuri Mountains and the Ariake Sea spreads the Saga Plain, formed from sediment carried by rivers such as the Chikugo and the Kase, and it has long been one of Kyushu's leading rice-growing areas. Plentiful underground water (water that soaks into the ground and flows beneath it) from the Sefuri Mountains, Mount Tara and elsewhere could also be used across the prefecture, making it a land well suited to sake brewing. Among rice varieties suited to sake brewing (shuzo kotekimai), there is “Saga no Hana,” bred by the prefecture.
Sake brewing took off in Saga in the mid-19th century, at the end of the Edo period. It is said to have come from Naomasa Nabeshima, the 10th lord of the Saga domain, encouraging sake brewing to restore the domain's strained finances. In June 2013, Saga Prefecture put into force the “Ordinance to Promote Toasting with Sake in Saga Prefecture.” Under the prefecture's “Saga Prefecture Appellation of Origin Control System,” junmai-shu (sake made only from rice, rice koji and water) brewed in the prefecture using only Saga-grown rice and water drawn in the prefecture, and which passes an assessment of its aroma and taste, is certified as “The SAGA Certified Sake.”
